Purchase either open or closed veil mushrooms as long as they are fresh with a smooth texture. Mushrooms should be free from major dark spots, with a dry (not dried-out)surface.

Store mushrooms immediately in the refrigerator in either their original container with pp bag. Mushrooms can last about 30 days if properly stored and refrigerated. Mushrooms need air or they begin to deteriorate, so take the necessary steps to preserve shelf life and never store mushrooms in sealed plastic bags or containers.

Clean mushrooms with a damp cloth or soft brush to remove any particles (most specks are just peat moss from the growing process) but only just before you are ready to use them. If mushrooms need to be washed, rinse them quickly under the faucet and pat them dry with paper towels. Never soak mushrooms because their surface is very porous and they will absorb lots of water!

Freezing mushrooms is usually not recommended, but if it is necessary, mushrooms should be sauteed first in oil or butter. Cool them down quickly in the refrigerator before storing them in the freezer in am airtight container. Frozen mushrooms are best when used within one month of freezing.
